Chocolate Coconut Bars Recipe   

Ingredients:

  • 125g margarine
  • 1/2 cup brown sugar
  • 1 cup coconut
  • 1/2 cup plain flour
  • 1/3 cup SR flour
  • 1 tablespoon cocoa
  • 1 egg

Icing:

  • 1 cup icing sugar
  • 1 tablespoon cocoa
  • 1 teaspoon margarine
  • 1 tablespoon milk
  • 2 tablespoon extra coconut

Instructions:

  1. Pre-heat oven to 180 degrees C.
  2. Lightly grease lamington tin.
  3. Melt margarine in a medium saucepan over low heat then stir in dry ingredients.
  4. Add lightly beaten egg. Mix well spread evenly into tin (use a fork).
  5. Bake for 20 mins.
  6. Spread with icing immediately. Stand for 5 mins then sprinkle with coconut.

Icing:

  1. Sift dry ingredients into a bowl. Stir in melted margarine and enough milk to make a smooth paste.
