Fruit and Nut Slice Recipe  

Ingredients:

  • 125g butter
  • 15ml golden syrup
  • 1¼ cups plain flour
  • 1 tsp baking powder
  • 1 cup desiccated coconut
  • 1 cup chopped walnuts
  • 1 cup raisins
  • 1 cup white sugar
  • 1 egg
  • Icing sugar

Instructions:

  • Melt butter and golden syrup in a saucepan large enough to mix all the ingredients.
  • Remove from heat. Sift flour and baking powder into the saucepan.
  • Stir in coconut, raisins, walnuts and sugar. Lightly beat egg.
  • Add to saucepan mixing until well combined. Press into a greased 20 x 30cm sponge roll tin.
  • Bake at 180°C (or 160° fan forced) for 20 minutes or until golden.
  • Once cold, dust with sifted icing sugar. Cut into squares.
