Butter Cake Recipe   

Ingredients:

  • 125g butter
  • 1 1/2 cups plain flour
  • 1 cup castor sugar
  • 3/4 cup milk
  • 3 eggs
  • 15 ml baking powder

Instructions:

  1. Place butter and milk in a saucepan large enough to mix all the ingredients. Heat until butter melts. Cool to room temperature.
  2. Add eggs, castor sugar, sifted flour and baking powder to the saucepan and beat with a hand mixer on low speed until combined.
  3. Increase speed to medium and beat for 2 minutes until smooth.
  4. Pour mixture into a baking paper lined 20cm cake tin.
  5. Bake at 180°C (or 160° fan forced) for 35 to 40 minutes or until cake springs back when lightly touched.
  6. Leave in tin for 5 minutes before turning on to a cooling rack. Ice with butter icing when cool (see the Butter Icing recipe)
